Hey friends ! I wanted to make a focaccia for you. But I think it never looks like a real focaccia. So here I am with an aperitif sourdough bread.
Story time : I’ve set my oven on fire while preheating it for this recipe. So right now I don’t have an oven. This bread cooked in my neighbour’s oven.
This is a very lazy recipe. No kneading and long rest. You throw everything in, mix and let rise. You can customise the flavours by switching herbs and spices. My favorite at the moment is thyme and rosemary but oregano and basil is gorgeous too. You can add garlic, dried tomatoes, anything your heart desire.
The ingredients
350g flour (all purpose is great)
320mL water
50g active sourdough starter
1 tsp salt
1 tsp rosemary
1 tsp thyme
Pepper
5g olive oil + some to coat the dish
The steps
Start by feeding your starter. You need to make enough for the recipe and the master starter.
Early in the morning, I take 20g of starter, add 50g flour and 50g water. So when I take the 50g for the recipe I still have 70g of master starter.
When your starter has double and is very bubbly, you can start the recipe.
It’s around lunch time for me usually.
In a glass mixing bowl, add all the ingredients and mix with a wooden spoon.
Cover with a damp tea towel and let rise at room temperature for 12 hours.
12 hours would 1am for me so I switched things up. I’ve put it in the fridge for the whole night.
When waking up, take it out of the fridge and preheat your oven at 240°C.
Coat an oven dish with olive oil and pour the dough in it. Spread it with your fingers.
Bake for 30 to 40min depending on your dish.
